Not Your Amma's Rogan Josh



First, a disclaimer: In no way does this recipe claim to be an authentic interpretation of Kashmiri rogan josh, hence the title, "Not Your Amma's (common Indian term for grandma) Rogan Josh."

"Real" rogan josh comes from the Kashmir region of India, where they have Kashmir chilies (mirch/i).  These chilies give the dish its signature red color, but are not necessarily easy to procure in their whole form.  Ground kashmir chilli powder can be found in certain Desi groceries, however, "real" rogan josh is supposed to have the dried whole mirchi.  Paprika is also a common substitute in Indian restaurants due to its color and mild flavor. 

With this in mind, I figured I'd try out dried guajillos in place of the proper or traditional chili.  Additionally, I had picked up some beautiful shoulder chops from the butcher that I wanted to use.  Instead of chopping the meat into cubes, like you usually would see, I decided to cook these lamb chops whole with the bones for the extra flavor and a different presentation altogether.  

If you cannot find the spices in their whole forms, ground will work, but be mindful that ground spices burn more easily than their whole counterparts.  

In any case, give this unabashedly inauthentic Indian dish a try and you'll be sure to like it.  



Ingredients (for approx. 3 people):
Paste

Thumb-sized piece of ginger
5-8  cloves of garlic
2 T  of water

The Rest

1 1/2 lb lamb shoulder
5-6 T of veg/canola oil, 1 T for browning lamb
1 large onion
1 large shallot
2 bay leaves
2 T cardamom
8-10 coriander seeds
6-8 black peppercorns, whole
3 whole cloves
1 stick cinnamon, 1/2 inch in size
1/2 t mace
5-6 guajillos, stems removed and soaked
1 t cumin
1 t cayenne
3-4 T yogurt
6 oz reserved guajillo "stock" or water
fresh cilantro for garnish
salt and black pepper to taste
